BOGO, Gluten, and Strawberry Jam

My camera is out being cleaned, and I am really excited about that, because I tend to not be so in love with my camera when it is a dirty filthy camera.

But I am excited that soon it will have some brand newness, and then also having it gone for a week makes me want it more, and of course I want to want it more. I love taking pretty pictures. But this isn't about pictures. It's about the post I missed Monday.

I didn't get any BOGO stuff, because it all contained gluten.
Bah.
I DID however, get lots of chicken. And fruit. And Vegetables.

I've decided to drastically reduce the gluten intake at our house, and although for the most part, it is easy to eat gluten free, especially if you don't mind making everything the LONG way and from scratch, it is still a transition, and I want bread and pasta.

In fact, we started last week on Wednesday, and of course, some gluten has been eaten.
(STFU! It's HARD!)
Last night we had hamburgers (no buns!) and tater tots and corn on the cob.
Tonight I am making grilled nuggets (extra for Madee's lunch tomorrow), and finishing off the Chicken Tortilla Soup leftovers.
Cereal night is still on with an array of Chex flavors in rice or corn varieties. Yay!
Strawberries are on sale and delicious like whoa so I think I am going to make some jelly/jam/preserves of some kind. Maybe freeze some for yogurt, smoothies and ice cream toppings.
Chicken Tacos with beans and rice is on the menu this week.
On salad night I'm throwing some chicken on this jewel right here. Oh my tummy wants that IN it!
And then I figure chicken and rice in some capacity will be prepared in some way or another. That's pretty easy to improvise and make gluten-free.
For snacks we are eating cashews, popcorn, plain yogurt with real strawberries, fresh fruit, and i am going to make some rad chex mix.

And away we go on this more gluten free journey.
Have you gone gluten free? Do you have any good links to recipes and food solutions?
Do you have any favorite gluten free snacks?
Will I ever stop thinking about bread and pasta?
No, seriously. I want them in my mouth.
